The membership was one of the highlights of the European Waste Reduction Week and marks the participation of the first Michelin-starred restaurants in the agreement.
Five of the most sophisticated restaurants of the “Monte Carlo Société des Bains de Mer” (SBM) group have signed the “Responsible Restaurant” pledge of the Monegasque government. Michelin star holders Blue Bay and Elsa, along with Mada One, Le Deck and L'Hirondelle, which already implemented eco-friendly measures and seasonal menus, have taken another step towards sustainable practices by adhering to the commitment.
The “Responsible Restaurant” certification was launched in the Principality of Monaco in 2017, and is a way to distinguish and identify establishments committed to sustainability. Among the mandatory measures to obtain the certificate are: the reduction of waste, the reduction of food waste, the conscious use of resources such as water and energy, local involvement and the dissemination of responsible actions for consumers.
In addition to the mandatory measures, the five restaurants of the SBM group are committed to implementing at least one new sustainable action per year and each one will receive individual support to improve the actions already carried out.
Monaco launched at the beginning of the month the document “White Paper” which proposes an analysis of tourism in the Principality. In line with the United Nations Sustainable Development Goals, the document reveals an overview of the current situation, as well as the strengths and weaknesses of the tourism scenario and the practices aimed at sustainability implemented so far in the country.
The country that has been working for decades to promote more responsible tourism reaffirms, with the “White Paper”, Monaco's commitment to sustainability and best practices in tourism.
